Place the whole brinjal on the flame and let it burn totally. Then after being burnt wholly, wash it in normal water. By this, the black patches can be removed easily. Then smash it along with chopped cilantro, chopped onions and green chillies. Now your recipe is ready.

  • 300 gm paneer cheese
  • 1 medium sized red pepper
  • 200 gm button mushrooms, if not available you can skip
  • 1 cup chopped green beans
  • 3-4 spring onions
  • 1 ½  tablespoon of curry powder
  • ½ tablespoon garlic ginger paste
  • 1 ½ tablespoon of garam masala powder
  • 4 ½  cup plain yoghurt, ½ cup kept separately
  • 3 tablespoon olive oil
  • 1 ½ tablespoon water
  • ½  table spoon normal salt
  • ¼ tablespoon crushed pepper
  • Some chopped cilantro (coriander)

Instructions:-

  • First heat the oven upto 200 °C. Then mix all the spices, salt and chopped pepper in a bowl well and thoroughly.
  • Then put the separately kept ½ cup yoghurt , 2 tablespoons of olive oil and water. Then saute them till they become a paste.
  • Then start adding the chopped veggies, mushroom and paneer to the prepared paste and saute them until they are evenly coated with the paste.
  • Brush the baking tray evenly with the remaining oil, and then add the ingredients.
  • Leave it to get cooked for 35 to 40 minutes in the oven till the ingredients become brown in colour.
  • Then spread the remaining yoghurt and chopped cilantro evenly on the recipe for garnishing. Your recipe is ready now. You can also store in refrigerator upto 3days.

Cauliflower curry:-

Ingredients:-

  •  1 head cauliflower florets and chopped into 2 inch pieces
  •  7-8 tbsp greek yogurt
  • 1 tbsp garam masala
  • 1 ½  tbsp lemon juice
  • 1 tbsp crushed black pepper
  • ¼  teaspoon ground ginger

Sauce preparation:

  • 1 cup tomato sauce
  • 1 cup coconut milk
  • 5 finely sliced cloves garlic
  • 1 tablespoon garam masala
  • 1/2 tbsp paprika
  • 1/2 tbsp turmeric powder
  • 1/2 tbsp normal salt
  • ¼  tbsp chilli powder

Instructions:-

  • Cauliflower is marinated  with yogurt, garam masala, lemon juice, pepper, and ginger in a large bowl and mix them well. Cover the ingredients in a bowl with a lid and refrigerate overnight.
  • Before marination, keep the oven heated upto 200 degree Celsius. Then keep the marinated cauliflower florets in a single layer spreading on a baking sheet lined with aluminium foil or parchment paper. Bake them in the oven until the cauliflower becomes tender and soft. It will merely take about 20 minutes. While the cauliflower is being baked, start preparing sauce.

Preparation of Sauce:-

  • Mix together all ingredients mentioned under the sauce portion.
  • Keep the flame in sim condition. Stir them intermittently. Leave them in sim condition till sauce becomes dense. It will take about 10 minutes. You may keep on low flame for some more minutes also.
  • Then add roasted cauliflower florets to sauce in the pot. Stir thoroughly until cauliflower is evenly coated with sauce. Now your recipe is ready to serve.

Ingredients:-

  • 3 tbsp coconut flour
  • 1  tbsp psyllium husk powder
  • ¼  tbsp baking powder
  • Pinch of salt
  • 1 ¾  tbsp ghee and about ½  tbsp more ghee kept separated for frying
  • 1 tbsp edible agar agar powder dissolved in 1 tbsp boiling water

Instruction:-

  • Take a medium sized bowl and mix together the coconut flour, psyllium husk powder, baking powder, and salt in that bowl.
  • Then add ghee and agar agar powder and make a dough of it by smashing frequently.
  • Divide the dough into 2 separate balls and flatten each dough into a slim circle. The dough should be as flat as possible, keep that in mind.
  • Heat a nonstick skillet over medium-high flame. Brush a bit of ghee to bottom of the skillet. Then put one of the dough circles and keep the heat to medium.
  • Cook until both sides become golden in colour. Roughly it may take upto 10-12 minutes, flip to the other side after that. Using a spatula for flipping is better.
  •  You can switch off the gas to stop from burning.
  • Follow the same method for 2nd dough.
  • You can take this bread with other side items.

  • Medium sized chopped cauliflower,100gms of chopped green beans,100gms of minced  mushrooms
  • ½ cup tomato puree
  • 2 tbsp olive oil or ghee

  •  ½  tbsp chilli powder
  • ¼  tbsp garam masala
  • ¼  tbsp tumeric powder

Instructions

  • Keep the temp of the oven upto 200 degree Celsius.
  • Take the tomato puree, spices, sliced garlic and ginger in a medium sized bowl. Stir them wholly in the liquid ghee or oil. Then add the vegetables and stir them till they are evenly coated.
  • After being evenly coated, spread the vegetables in one layer on the sheet pan and sprinkle some salt and pepper over them.
  • Let them roast in the oven for 20 minutes or until the veggies become tender and soft. Now your recipe is ready to serve.

  • 1 riced  head cabbage
  • 2 tbsp ghee or butter
  • 1 tbsp turmeric
  • ½ tbsp curry powder

Instructions:-

  • Take ghee in a hot skillet and wait until it is melted.

Ingredients:-

  • 1 chppped medium onion(100gm)
  • Pinch of salt as per salt
  • 1 tbsp minced fresh ginger
  • ½  tbsp coriander powder
  • 1 teaspoon garam masala powder
  • 1 tbsp cumin powder
  • ¼  tbsp whole cumin seeds another ¼ tbsp cumin seed kept separate for dough
  • ⅛ -¼  teaspoon red chili flakes
  • ¼  cup chopped fresh cilantro
  • 3/4 cup super fine almond flour
  • 250gm of Shredded Mozzarella cheese

Instructions

For the filling:

  • Put a large skillet over medium heat.
  • Add butter when skillet becomes hot. Add the cauliflower and onions when butter is melted.
  • Add the salt over the vegetables as per taste. Cook, stir from time to time, till the vegetables are tender and brown in colour.
  • Then add ginger, coriander, garam masala, cumin powder, cumin seeds, and chili flakes to the vegetables. Keep stirring for 1-2 minutes to till aroma of spices comes. Then switch off the heat.
  • Then add cilantro. Taste the prepared veggies. If not prepared well ,stir for some more minutes. Add salt as per taste.
  • Then keep the temperature of oven upto 190 degree Celsius.

Dough preparation:-

  • Prepare to set up a double boiler. Keep water in lower part of double boiler.
  • Bring the water in the lower part of the double boiler to a sim condition over high heat. Once it starts simmering, switch off the gas.
  • At this time, cumin, the almond flour, salt, and mozzarella are mixed well and placed on the top part of the double boiler. Stir them together gently.
  • Put the bowl,  which contain the almond flour mixture over the simmering water.  
  • Stir the mixture frequently, keep heating them until the mozzarella cheese melts and the dough is formed from the mixture.
  • Put the dough onto one of the pieces of parchment and mould the dough a few times to get the ingredients equally distributed.
  • Prepare a shape of thick rectangle from the dough. Then cover the rectangle with another sheet of parchment. Then roll the dough into a rectangle of 8 inches breadth and 16 inches long.
  • Cut the dough rectangle into eight 4 inch square.

  • Fill the center of each square with the prepared vegetables for filling.
  • Divide vegerables equally among all the squares. Join the diagonals of the square to form triangles and then press the edges closed.

  • Make small holes in each samosa to keep place for the steam to release outside. Then bake them for 14-17 minutes till they become golden brown in colour.

Ingredients:-

  • Half bowl keto/ almond flour
  • Grated carrot
  • Chopped onion medium sized
  • Sliced green chillies
  • Salt as per taste
  • Chopped medium sized tomato
  • 4-5 tbsp olive oil
  • Roughly cut cilantro
  • 1 cup water

Instructions:-

  • Take half bowl keto/ almond flour. Add all the ingredients described above except olive oil.
  • Mix them thoroughly. Make a little thick bater like the raw egg yolks. If it becomes more dense, add some more water. Add water in small amount, so that it doesn’t become more liquid.
  • Then heat a nonstick pan on medium flame.
  • Put 2 tbsp olive oil on it. When oil becomes hot, put the prepared bater on it and spread it with spatula to make a circle of it.
  • After 2 min the when upper portion looks dry, then flip to the other portion. Leave it for 1 and ½ min more. Keep the flame low, so that it doesn’t burn.
  • Then prepare other besan ka chilla in this way from the left ingredients.

Ingredients:-

  • 3-4 medium sized brinjal cut into small parts lengthwise
  • Olive oil
  • Less dense yoghurt (You can add some water to make thick yoghurt less dense)
  • 1  tbsp Chilli powder
  • ½  tbsp Cumin powder
  • Salt as per taste
  • 1-2 dry chilli
  • Some bay leaves
  • 1 tbsp Panch phoran/ mixture of whole mustard seed,cumin seed,fenugreek seed, fenel seed and Nigella seed

Instructions:-

  • Place a nonstick pan over high flame. Put some olive oil on it.
  • Then keep the sliced brinjal pieces over it. Put a cover on it to cook fast. Then after 2 min open the cover and when the side becomes golden brown flip the other side to fry.
  • When brinjal pieces are fried well, keep them in another pot and leave them to get cool.
  • When the heat is gone from the fried brinjal pieces,then put them in the yoghurt. Don’t put hot brinjal in yoghurt, otherwise the yoghurt would split.
  • Then put the pan again on the stove in medium flame. Then put some oil and when oil is hot add panch phoran, bay leaves and dry chillies to it.
  • When it sizzles, add them to the yoghurt.
  • Add some cumin powder and some chilli powder to the yoghurt after that.
  • Now your tasty recipe is ready.

  • 2 tbsp curry powder
  •  Pinch of salt as per taste
  • 2 tbsp tomato puree
  • 3 tbsp crushed almonds
  • 400 ml of coconut milk
  • 60 ml of vegetable stock

Instructions:-

  • Put a nonstick pan on medium flame. Then put coconut oil. Add the onion, ginger, garlic and chilli when the oil is hot. Saute them for 2-3 minutes till the colour turns to light brown.
  • Then add the curry powder and salt and stir for another 3 minutes.
  • Then add the tomato puree, crushed almonds and coconut milk.
  • Bring the flame to sim condition. Then remove it from the heat.
  • Then put them all together in a blender and make a smooth, creamy sauce from it. Keep it aside.

Ingredients:-

  • 400 gm cauliflower chopped into 1-inch florets
  • 3 smashed garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp turmeric powder
  • 1 tbsp cumin powder
  • ½  tbsp chilli powder
  • ⅛ tbsp crushed pepper
  • Salt as per taste
  • 1 medium sized chopped onion
  • 3 cups vegetable broth
  • ¼ cup coconut milk,
  • 2 tbsp chopped cilantro

Instructions:-

  • Keep the oven temp. upto 200 degree celcius before cooking.
  • Take the cauliflower florets and smashed garlic in a large bowl and spread 2 tbsp olive oil over it.
  • Mix them thoroughly so that florets are evenly coated with oil.
  • Then take turmeric powder, cumin powder, salt and crushed pepper and chilli powder and sprinkle them evenly over cauliflower and make them evenly coated.
  • Place the cauliflower on a baking sheet and bake them in the oven until they become brown in colour and tender. It will take about 25-30 minutes. Saute the florets occasionally so that they are evenly cooked.
  • Meanwhile, keep a medium pot over medium flame. Add 1 tbsp oil and chopped onion and cook until onions become translucent in colour. It will require only 2-3 minutes.
  • Then add the broth and transfer the roasted cauliflower to the pot. Then boil them for 15 min.
  • Then put them in a blender and blend until they become smooth. Then add salt as per taste. Then add coconut milk and garnish with chopped cilantro and serve.

Ingredients:-

  • 1 ½   cups grated coconut(no sweetness)
  • 1 ½   cup coconut milk (less sweetness)
  • 100 gm ghee
  • 4 tbsp Erythritol
  • 1 tbsp cardamom powder
  • ½  tbsp elaichi powder
  • 15-20 saffron threads
  • Some chopped almonds(optional)

Instructions:-

  • Take a medium sized bowl and mix the grated coconut with one cup of coconut milk. Keep this mixture aside for 25-30 minutes.
  • Then add remaining ½ cup of coconut milk. Then mix the saffron threads and the erythritol in it.
  • Mix them thoroughly till the sugar dissolves. After 25-30 minutes, heat a kadai and put the ghee in it and leave it to melt.
  • Then add the coconut mixture, and keep stirring and check that the flame should be low so that the mixture does not sticky.
  • Keep stirring for 5-7 minutes.
  • Then add the elaichi and cardamom powder and cook the mixture for another 5-6 minutes.
  • Take a baking tray, brush with a little butter and then spread the mixture evenly.
  •  Garnish with chopped almonds and gently press them in. It’s optional and for better taste. Then keep it in the refrigerator for 2 to 2 ½  hours.
  • Then cut the cake into small squares according to your own liking and the coconut barfi is ready to eat.

Keto malai peda:-

  • 400 gm cheese
  • 50 gm butter without salt
  • 150 gm whey protein powder (no flavour/ vanilla)
  • ⅓ cup powdered Erythritol or any other natural sweetener
  • 1 tbsp cardamom powder
  • Butter or ghee for greasing
  • Chopped almonds for topping

Instructions:-

  • Put a pan on stove and put some butter on it on low flame.
  • Then add cheese and mix it with the butter. Stir it till the cheese melts.
  • Then add the sweetener and give it a well mix.
  • Check that the mixture does not get sticky. Then add the protein powder, half cup step by step, till the mixture  thickens. Keep stirring frequently so that no lump formation occurs.
  •  Then add the remaining powder. After 4-5 minutes of cooking, the mixture is thickened. Then add cardamom powder and mix them thoroughly.
  • Leave the mixture to become cool and after that shape them into balls.
  • Before making balls grease your palms with butter or ghee and then start shaping the lumpy mixture into small balls and press them slightly in the middle.
  • Then top each ball with chopped almonds. You  can keep the protein balls in refrigerator for up to a week.
  •  When you want to consume them, defrost them before 3-4 hours.
