Low Carb West African Recipe: Cauliflower Jollof – The Fast 800





A low carb West African recipe that can be whipped up in just 20 minutes. If you’re looking to increase your fiber intake, this is the dish for you!

This recipe was developed by Bintu at Recipes from a Pantry in collaboration with The Fast 800, and gives you some West African inspired recipes to try. Jollof is an iconic rice dish made in West Africa, to reduce carbs this one is made with cauliflower rice. This dish will easily serve 3-4 people as a side dish, or 1-2 as a lighter meal.

Ingredients

  • 2 teaspoons of extra virgin olive oil
  • 1 onion, finely chopped
  • 1 red bell pepper (bell pepper), seeded and diced
  • 1 bay leaf
  • 2 garlic cloves, minced
  • ½ teaspoon minced ginger
  • ½ teaspoon dried thyme
  • ½ teaspoon ground coriander
  • ¼ teaspoon white pepper
  • 2 tablespoons tomato paste (paste)
  • 400 g cauliflower rice
  • 120 ml of vegetable broth
  • Salt

Instructions

  1. Heat the olive oil in a saucepan over medium heat and add the onion, bell pepper and bay leaf and sauté for about 5 minutes or until the onions have softened. Stir regularly so the onion doesn’t burn.
  2. Reduce heat to low and quickly add garlic, ginger, thyme, ground coriander, white pepper, and tomato paste until blended.
  3. Add cauliflower and broth and stir until well combined.
  4. Then cover the pan and cook the cauliflower jollof over low heat for 7-8 minutes until the cauliflower is steamed. Taste, add salt if needed, discard the bay leaf and serve as a side dish, or double the portion for a meal.
