I recently had a conversation with T. Colin Campbell, the noted professor emeritus of nutritional biochemistry at Cornell. He is 88 years old, he is agile and sharp-minded. It may be an anomaly at that age. But he doesn’t have to be.

“My father had a heart attack when he was 62 and a fatal heart attack when he was 70,” recalled Campbell, who grew up on a farm west of Leesburg, Virginia. “I wasn’t overweight.
