Mumbai’s Veg Frankie is so famous now that you can find Frankie stalls all over the country – in parks and on beaches, on the street and in food courts.

A satiating snack that can be seen everywhere, the Veg Frankie is made by rolling the potato mixture inside the wrapper of the roti.

Veg Frankie is one of the most famous street food items of Mumbai and it is a delicious experience to have cleverly prepared by Frankie Wala.

The Rotis are made in advance, but Veg Frankie is cooked again with butter before making. It’s not just the mashed potato mix that makes Frankies so delicious, but the onion and crunchy masala paani that impresses as well.

Every single ingredient – from butter-baked Rotis to tangy water, crunchy onions and Frankie masala – contributes to the flavour of Mumbai Street Food’s Veg Frankie.

I would like to give some tips to make the perfect veg Frankie recipe 

1. Mash the potatoes well with a potato masher or your hands before you add them to the non-stick pan.

Ingredients for Veg Frankie Roti

  • 1/2 cup all-purpose flour
  • 1/2 cup wheat flour
  • 1 1/2 tsp oil
  • Salt, to taste
  • 1/4 tsp oiḷ, for kneading,
  • 2 tsp butter, for cooking

Veg Frankie Stuffing Ingredients

  • 1 1/2 tsp oil
  • 1 tsp ginger-garlic paste
  • 2 cups boiled, peeled and mashed potatoes
  • 3/4 tsp chilli powder
  • 1 tsp garam masala
  • 1/2 tsp Chaat masala
  • 1 tbsp finely chopped coriander leaves
  • salt, as per taste

To make masala water (makes about 1/4 cup)

  • 1 1/2 tsp amchur powder
  • 1/2 tsp chilli powder
  • 1/4 tsp garam masala
  • Salt, as per taste
  • 1/4 cup water

Other ingredients for Veg Frankie

  • 4 tsp Butter,
  • 1 cup finely chopped onions for cooking
  • 2 tsp Frankie masala or chaat masala

For serving

How to make Veg Frankie’s Roti

  1. Combine the refined flour, wheat flour, 1 1/4 tsp oil and salt in a deep bowl and knead into a soft and smooth dough, using enough water.
  2. Cover the dough with a wet muslin cloth and keep it aside for 10 minutes.
  3. Knead the dough again for 1 minute using the remaining oil. Divide the dough into 4 equal parts.
  4. Each part is about 200 min. m. (8″) diameter, roll it into a thin roti.
  5. Heat a Tava (griddle) and cook each roti on a medium flame for 1 minute from both sides and keep aside.

How to make Veg Frankie’s Stuffing

  • Heat the oil in a deep non-stick pan, add the ginger-garlic paste and sauté on a medium flame for 30 seconds.
  • Add the potatoes, chilli powder, garam masala, chaat masala, coriander and salt, mix well and sauté on a medium flame for 2 minutes. Keep aside.

How to proceed to make Veg Frankie

  1. To make Veg Frankie, place 1 roti on a Tava ( griddle) and cook on a medium flame using tsp of butter for 1 minute or till the roti turns light brown in colour from both sides. Keep aside.
  2. Heat tsp of butter in a Tava (griddle), place the stuffing on it and cook on a medium flame for 1 minute.
  3. Place the roti on a clean, dry surface, place the stuffing on one end of the roti, evenly spread 1/4 cup of onion and evenly sprinkle 1 1/2 tsp of masala water and 1/4 tsp of chaat masala.
  4. Roll it tightly.
  5. Wrap the veg Frankie in aluminium foil/tissue paper. Repeat steps 1 to 5 to make 3 more veg Frankies.
  6. Serve immediately with tomato ketchup.

Cheese Frankie: Sprinkle 2 tsp of grated processed cheese over the stuffing (at step 3 in the recipe above) and proceed according to the recipe.

Schezwan Frankie: Just spread 1 1/2 tbsp schezwan sauce evenly over the roti (recipe no. 3) and proceed as per recipe.

Paneer Frankie: For the stuffing, use 3/4 cup shredded paneer cubes instead of 3/4 cup potato and proceed as per recipe.

Jain Frankie: Use an equal quantity of raw banana instead of potato and the same amount of cabbage instead of onion. You can also add grated processed cheese over the stuffing to make it more flavourful.

  3. Now, add potatoes to the pan. Mash the potatoes or mash them well with your hands and put them in a non-stick pan.
  4. Add chilli powder to spice up the Veg Frankie’s stuffing.
