Loading up on vegetables is a great dieting strategy. Vegetables are packed with essential vitamins and nutrients and are a great addition to any healthy diet. But are all vegetables created equal? The candida diet is one of these diets in which you should pay special attention to what kind and how many vegetables you eat. The Candida diet is the cornerstone of treatment for a condition called candidiasis. Candidiasis is a condition in which Candida albicans, usually a benign type of yeast, becomes an opportunistic organism in the intestinal system. The Candida Diet seeks to cut down on the food supply by eliminating foods that encourage the growth of Candida albicans. While the main culprits are sugar, vinegar, fermented foods, sticky grains and quick-acting carbohydrates, there are other foods that the Candida Diet Guidelines suggest consuming in moderation. Complex grains and high starch vegetables fall into this category because although they do not break down into sugar as quickly as simple carbohydrates they do break down into sugar and feed Candida.
