Healthy Meal Recipes for a Quick Meal

With the heat of summer and the fact that we have long days, at times we would like to eat something light and that too in the evening. Ideally speaking, a quick easy dinner as well as an easy healthy dinner. Here is a healthy food recipe for a quick meal.

Based on one of my favorite marinades, this healthy meal recipe is a quick easy dinner that can be made for 1 or more people (if you’re entertaining). I prepared halibut earlier this week over brown and wild rice and served green beans with dates. This easy healthy dinner took no time at all to make.

The ingredients used for this quick meal are:

1 part halibut

Brown rice

wild rice

Date

green beans

To start this quick easy dinner, combine halibut in a bowl with equal parts olive oil, balsamic vinegar (2 teaspoons each) and a clove or two of garlic. Coat the halibut and put the fish in the fridge for about two hours.

Meanwhile, follow cooking directions on back of package for wild rice and brown rice and cook both types of rice separately. When I made this healthy food recipe, I used 1/4 cup wild rice and 1 cup brown rice.

Once both the sets of rice are cooked, mix them together and add the chopped dates. Be sure to check the dates for the nuts. Allow the chopped dates to heat up both the sets of rice. Keep the rice aside.

After the halibut is marinated, bake the fish in the oven until it’s soft and flaky, but not raw in the middle. To make this a really quick dinner, buy fresh frozen green beans and heat them on the stove while you’re cooking the halibut.

If the rice has turned cold, you may want to put it in the microwave for a few seconds to reheat it. Place the rice on your dinner plate, then the cooked halibut on top and then the cooked green beans on one side, and there you have it for a quick easy dinner using one healthy meal recipe.

I love to save even more time cooking dinner in the summer and often prepare my combination rice ahead of time and refrigerate it. I make a few servings and then take it out for this dish or any other quick meal I might cook during the week.
